Making Coconut Wine

The coconut tree sap is extracted and collected by trapper. Typically, the sap is collected from the cut flower of the palm tree. A container is attached to the flower stump to collect the sap.
The white liquid sap that is initially collected tends to be very sweet and non-alcoholic before it begins to ferment. Fermentation starts immediately after collection due to natural yeasts present in the air.
Within two days, fermentation yields a fragrant wine with up to 4% liquor content that is mildly intoxicating and sweet.
The distilation process can produce up to an 80 proof vodka or up to a 40% alcohol content. Niyok's coconut wine is 30 proof vodka or a 15% alcohol content.
